Old Carolina serves the flavors of the pork-dominant barbecue region of the Carolinas. They'll slow-smoke their meats for as long as 14 hours with real hickory wood. But there's some Texas taste in there too, including a beef brisket that gets a serious rub and 10 hours at 225 degrees.
